Tablescape Thursday and Foodie Friday

Back in February my third post ever was a Foodie Friday contribution titled, "Meet the Fockers". We were entertaining the future in laws for the first time to discuss wedding plans. I mulled over the menu for days. Well, last weekend Firstborn Son asked us to entertain his girlfriend's parents from out of town. It was her birthday and he wanted us all to "meet and greet". This time I just went with the flow and it turned out to be a fun and relaxed evening for all!



A simple red and yellow themed buffet style table worked like a charm. After feeding sixteen last weekend on china, I wised up--dinnerware by Chinet! Yep, I used red plastic over sized plates for the nine of us! I pulled out the tailgating tablecloth, bought my Kroger sale bin flowers, and hit the picnic aisle in the grocery store. Those leftover galvanized buckets seem to show up in almost every tablescape. The Target birds have friends--the Target fish!



The menu was a simple one--Fried dill pickles and spinach dip for appetizers, catfish, hushpuppies, french fries, homemade tartar sauce, slaw, and fresh cucumbers with sweet onion in a red wine vinaigrette. I served a batch of peach tea and a few chilled long necks on the deck.





The bucket was a great condiment container--of course ketchup, the required Louisiana hot sauce, and commercial tartar sauce. Firstborn Son doesn't like my homemade variety (ungrateful thing :) A condiment dish held onions, lemons, and the homemade tartar sauce. The birthday girl's favorite dessert is creme brulee'. Although I might not have chosen it to go with this particular meal, it's my favorite too so I made it! Now, the tablescape is not awe inspiring, but it was fun and easy--my goals for the evening. The food, on the other hand, was down home gourmet! My husband is an expert with the deep fat fryer he got for Christmas. I've included a couple of recipes from the evening. And in case you're wondering, I was listening, but I didn't hear any wedding bells yet --but maybe soon :)


Homemade Tartar Sauce

1 1/2 teaspoons grated carrot, 1/2 mayonnaise, 1 1/2 tablespoons grated onion, 1 tablespoon dill pickle relish or grated dill pickle. Mix all ingredients. This gets better as the ingredients have time to meld.


Mama's Hushpuppies

This is a recipe that was not really a "recipe" until I watched and measured my mother's ingredients one day. Lots of good cooks use "about this much" as a guideline. That is why you will see the words "heaping" and "level". It's as close as I could get to measurements, but it has worked like a charm for many years. l full cup of white corn meal, 2 heaping tablespoons of flour, l level tablespoon baking powder, l teaspoon salt, 3/4 of a medium onion chopped finely, about 1/2-3/4 cup buttermilk, and 1 egg. Mix dry ingredients. Add buttermilk and egg; mix until the batter will drop by spoon (a little thicker than pancake batter). You may need to add a little more buttermilk. Drop by the spoonful into hot oil at 325 degrees. If you get it just right, these will turn on their own! Cook until golden brown.

    Sounds like a fantastic, (and truly Southern) meal to me! I think your presentation was perfect -- just right for the occasion and for the menu! The best hosts are relaxed enough to enjoy their own parties.

    I love that you buy your flowers from the Kroger sale bin ... that's always the second place I look (first I check to see what's blooming at home!)!

  2. Everything looks great and the food looks wonderful. Now I want catfish for dinner. :) Any damage from the storm last night? Several low lying areas close to me was under water - so much rain so fast. I had computer power off, but my modem was out when I turned everthing back on, so don't know is lightening thru cable line was responsible or not. Replaced it today.

  3. I have the Target fish! This looks like a mouth watering and friendly spread that anyone would love. (I would eat creme brulee with any meal too.) Gee,do you think you may be doing the whole wedding thing in the near future? This is so nice.

  22. Well, that is surely some Southern Hospitality! And I agree with your choices given the reason for the gathering. What better way to put everyone at ease and to just enjoy company than your momma's hushpuppies!

  24. Sorry, had to go grab a napkin so I could clean up the drool on my desk. This is one of my favorite all time meals. Don't have it near as often as I'd like any more, but when I do there isn't any leftovers for sure! I did indulge in some fried-green tomatoes the other night though and had the leftovers on a sandwich the next day. Do we Southerners know how to eat or what? Yummy, and I love the way you served it too — just perfect!

  26. Oh my, My daughter just got engaged on Fri. night and we are hosting the in-laws this coming Sat.!!!!! I do have the menu prepared (in my head) and am hoping it will be a success!!!!!!!!! I also have the table planned so will post it all next week:):) Thanks so much for the inspiration....to be calm, relaxed and GO WITH THE FLOW!!!!!!! They are lovely people so all should be good!   37. Great menu and I think your table setting was perfect for the occasion. Definitely liked, and am going to try, your hush puppie recipe. I've actually been looking for a good one....I grew up eating hush puppies, and we love to have them now, but for one reason or the other I've always used a mix. Most of the other things I cook are not from a mix so I've been wondering why I haven't tried making these from scratch. Now I have no excuse cause this looks like a winner!

  40. Never heard of Hushpuppies as a recipie. We only know the Hush Puppies shoes!!!!!. So fun to read about all thos for us so strange foodnames. It sounds like you had a great meal.I can agree with your son on the tartar sauce.Traditional tartar sauce should not have carrots in it but chopped capers.

    Banana boats were $1 each thrift store find this Spring and my family loves ice cream so much I thought they'd be fun. I found 2 at 1 store and 2 more exact replicas totally other town...funny, I'm collecting stuff people are throwing out. (not so funny to the Mr.) :D "

  51. What a relaxed Southern meal for meeting the parents! I love the bucket and the Kroger flowers! The food is great! I been thinking on what to serve in my home for my daughter's new boyfriend. He came once for a crawfish boil outdoors. Now, time for indoors and maybe tomorrow! I best get busy! lol You set a great example of a Southern Relaxing time!   55. I love the casual way you hosted your get-together with "her parents"! :) That approach ends up being just as nice and fun as one that required lots of fussing and stress. Way to go. I have those glasses, too. I think they call the pattern a Tartan design (mine came from W-mart). I used to have the pitcher that went with them, but it broke:( That hushpuppy recipe sounded divine! Bet your guests loved every minute with you guys!
